600 Days For Perfection

Matteo, our bottle conditioning specialist, keeps a close eye on his handywork.

After exactly 600 days of maturation, micro-oxidation, dedication, deliberation and celebration, Zephyr (our strawberry refermented double IPA matured in a prestegious Scotch barrel) appears out of the 1965 InverGordon grain whisky cask and into it's elloquent new home. 75cl Champagne style bottles was the only way to present a beer of such unparalleld stature and innovation.
