noob - the germination process is crucial, as it gives more time for the grain to change internal structure following the onset when water is added. Youre right, in that it leads to the husk opening, but once the grain has been through the kilning process we need to crush it to fully open up the grain and make all the starch available during the mashing process!

East of Europe such as India, Vietnam etc I imagine rice is used quite widely as barley isnt grown, well it does not seem to be. So I imagine that malt bills would feature adjuncts such as rice based on lack of availibility of malted barley and cost.

If the grains are cracked (in step 3), why is the seed germinated (in step 2)? Is it just a flavour step or is it critical for the sugars?

Rice is looked down upon because of Bud and the like, but as you say it helps sort out tricky mashes - so it does have its uses
