Pancake Day. With Craft Beer.

We love pancake day as much as the next pup, but this year we fancied throwing a curveball and stepping it up a gear with some craft beer infused pancakes. Putting a BrewDog spin on a classic, we have taken two of our signature brews and thrown some complementary flavours; check out the recipes below, grab a whisk and give them a whirl. Get creative and tweak them as much as you fancy, and let us know if you discover any other scrummy craft pancake recipes.

5am Saint & Cinnamon Short Stack

This is a great, pudding-y pancake recipe thanks to 5am Saint's caramalt sweetness and the rich depth of the beer lends itself beautifully to chocolatey toppings. A Dimebag Darrell of a dessert, this is big and dark and bold and badass, but also sweet and smooth and sexy. 

Ingredients:

1 bottle BrewDog 5am Saint

125g plain flour

2 tbsp caster sugar 

1/2 tsp baking powder

1 medium egg

1 tsp cinnamon

30g melted butter

To serve:

Vanilla ice cream

Chocolate chunks or sauce

Cinnamon

Mix the dry ingredients and the cinnamon in a bowl, then add the egg and beat. Slowly add the beer and whisk until you have a consistent batter. If you like bigger, thinner pancakes, add the whole bottle of beer, but if you prefer smaller, thicker pancakes, only use about 250ml of the bottle. Once you're happy with the thickness, add the butter and stir it in until thoroughly combined.

We won't tell you how to suck eggs but just incase you've lived a rather sheltered life and have never had the chance to try pancakes yourself, here's how it's done. Pour the mixture into a very lightly greased frying pan and fry on a low heat until the surface is covered in little holes from the bubbles. Flip, fry 'til cooked through and serve. Easy!

These are delicious served with a scoop of really creamy vanilla ice cream, a sprinkling of cinnamon, a few chunks of chocolate or a drizzle of chocolate sauce and a nice bottle of 5am saint on the side. Yum!

The Classic Punk-ake 

Punk IPA lends itself incredibly well to all manner of beer recipes adding flavour and intrigue to everything from a fluffy beer battered fish fillet to a big welcoming steak and ale pie, so it'd be blasphemy to not include it here! 

Ingredients:

1 bottle BrewDog Punk IPA

125g plain flour

2 tbsp caster sugar 

1/2 tsp baking powder

1 medium egg

A pinch of salt

To serve:

Caramelised bacon

Honey or maple syrup

Follow the instructions for the 5am Saint and Cinnamon short stack, but when it comes to serving, sprinkle dark muscavado or demerara sugar over some bacon and whack it under the grill until it's crispy. Serve the pancakes with the bacon on top for an American classic, and drizzle over maple syrup or honey. We went for honey for a slightly different twist, this works incredibly well to add sweetness without being overpowering and allowing the Punk to cut through and not get lost in the intensity of maple syrup.
