Dedicated to exploring and pushing the boundaries of what is possible with fermentation, we are on a quest to redefine Wild and Sour beers, forever. With a purpose-built facility where craft and nature find harmony, we utilise wild yeasts and microbes from our environment and ingredients sourced from all around the world.

SMALL BATCH SOURS

These are our Wildcards: Scottish sour ales fermented with our house culture, Cher Ami - the very bloodline of the OverWorks. Each one is introduced to the magic of Brettanomyces and aged in foeders to give a perfect balance of funk, bright acidity and fruit character.
