Our state of the art eco brewery

Located on a green field site in Ellon, north of Aberdeen, is our state of the art eco-brewery. One of the most technologically advanced in the world, from here we strive constantly to challenge people’s preconceptions about what beer is and how it can taste.

 

Our HQ was built by our community of Equity Punks – upon its foundations rest the support of the people who drink our beer. So inside, we have a single focus. Repaying them by brewing in a way that puts the passion and craftsmanship back into their beer glasses at every turn.

The Brewing Process

1. Mashing

This will add colour, flavor and sugars, which will later be converted to all important alcohol.

2. Lautering

Basically a giant colander, a slotted false floor supports the barley husks and allows the sweet liquid (known as ‘wort) to drain away.

3. Boiling

During the 90 minute boil, hops are added to the boil. Hops are a natural preservative and adds bitterness, flavor and aroma. Adding hops at the start of the boil will create tonnes of bitterness. Adding hops late in the boil add flavor and aromatics.

Hops are the flowers that grown on hop vines. We like to use hops from all around the world, and some of favourites are citrusy US hops, fruity New Zealands hops, and spicy English hops.

4. Fermentation

In the fermentation vessels, we add the magical ingredient…yeast! Yeast gets to work turning sugars from the malt into alcohol and carbon dioxide. Soon there are billions of yeast cells working around the clock. After 7 days, the larger sugar molecules are consumed. A beer’s strength depends on how much sugar is in the wort, and the temperature at which it ferments.

5. Conditioning

Begin maturation! This takes 3 weeks or more. Remove the yeast, and give a standing ovation! With hoppy beers, after around 10 days we dry-hop the hell out of them! Dry-hopping is the process of adding hops to beer at low temperature post-fermentation. Due to the low temperature, none of the alpha acids in the hops convert to bitterness. Instead an avalanche of flavor and aroma is infused into the beer.

6. Packaging

After about 4 weeks, we pack the beer into bottles, cans and keys and send out to the craft beer lovers all over the world! Many BrewDog beers are packaged in key kegs, made from card and recyclable plastic, to make each shipment more environmentally friendly.
