LITTLE EARTH PROJECT
Organic Harvest Saison
MIXED FERMENTATION SAISON
In early September, the hops Little earth grow on their field near the village of Chelsworth become ready for picking. The hop oils and aromas are all around you when handpicking in the September sunshine, so they decided to brew a beer to let these fresh green hops shine. Only their organically grown Suffolk hops and barley malt were used in the brew. The beer was primary fermented with a saison yeast strain and then a secondary fermentation, in oak barrels, with their own locally collected wild yeast. The resulting beer is dry with mouth coating of hop oils and pepper, orchard fruit flavours are at the fore with more funky spice from the yeast on the finish.

The Brew Sheet
Alcohol by Volume (a measure of booziness created by the yeast)
Beer styles are the categorisation of beer into easily distinguishable types. When doing this we look at history, colour, carbonation, bitterness, ingredients, mouthfeel… the list goes on
We'd typically use a lightly kilned Base Malt in a beer recipe, then add Speciality malts (sometimes darker, more complex, different flavours) in small quantities to change the overall taste and colour of the beer.
Hops are used in loads of ways, and they can give different characteristics to beer such as Aroma and Bitterness– this is why they rock!
