Spontaneity #3 is the third chapter born out of our coolship programme, which adopts traditional techniques to brew minimal intervention beer. Fermented using the wild airborne yeast from the Aberdeenshire countryside, and refermented on locally sourced blueberries, Spontaneity #3 spends over a year in oak where time works its magic and the liquid develops into a complex, intriguing and balanced sour ale that is a true expression of time and place.
This packaging is a homage to the natural world, which is vital in bringing our spontaneously fermented beers to life.
