<div>Spontaneity #3 is the third chapter born out of our coolship programme, which adopts traditional techniques to brew minimal intervention beer. Fermented using the wild airborne yeast from the Aberdeenshire countryside, and refermented on locally sourced blueberries, Spontaneity #3 spends over a year in oak where time works its magic and the liquid develops into a complex, intriguing and balanced sour ale that is a true expression of time and place.</div>
<p><br />This packaging is a homage to the natural world, which is vital in bringing our spontaneously fermented beers to life.</p>

<p>Spontaneity #2 starts its journey as a raw wheat and pilsner malt base, which forms the foundations of our wort. We add aged Bobek hops to the kettle during the boil before transferring to our 50HL copper coolship overnight where we capture all the wild yeast and bacteria for spontaneous fermentation. Once cooled, the liquid was transferred to oak puncheons where it’s aged for over 12 months.</p>
<p>The result is straw-hued, with aromas of fresh hay and brie rind. On the pallet there’s effervescent sherbet, tannic and vinous notes with hints of citrus that finishes super dry.</p>

<p>Our latest collaboration alongside Dutch brewery Nevel is a foraged sour ale with juniper, spruce tips and pine shoots. Expect herbal notes, caramel malts, nutty sherry and hints of balsamic. Aging in Cognac barrels has added complexity to the beer which finishes on a crescendo of rounded sourness with a silky mouthfeel.</p>
