<p>Dreams become reality in this layer cake of imperial proportions. Our sour Imperial stout is fermented with cherries and infused with vanilla. Rich, dark, decadent notes awaken and mix with the tart, tannic, dry and acidic flavours of our house yeast. Finished off with a smooth sweetness from the vanilla.</p>

<div>Spontaneity #3 is the third chapter born out of our coolship programme, which adopts traditional techniques to brew minimal intervention beer. Fermented using the wild airborne yeast from the Aberdeenshire countryside, and refermented on locally sourced blueberries, Spontaneity #3 spends over a year in oak where time works its magic and the liquid develops into a complex, intriguing and balanced sour ale that is a true expression of time and place.</div>


A mycelium gift pack grown especially to house 2 bottles of our Spontaneously fermented beer. The box you hold in your hand is made of mushroom compound mycelium, grown especially to house this beer, and blended with some old hops.

<p>Spontaneity #2 starts its journey as a raw wheat and pilsner malt base, which forms the foundations of our wort. We add aged Bobek hops to the kettle during the boil before transferring to our 50HL copper coolship overnight where we capture all the wild yeast and bacteria for spontaneous fermentation. Once cooled, the liquid was transferred to oak puncheons where it’s aged for over 12 months.</p>
<p>The result is straw-hued, with aromas of fresh hay and brie rind. On the pallet there’s effervescent sherbet, tannic and vinous notes with hints of citrus that finishes super dry.</p>
